Grape varieties: 100% Nerello Mascalese
Production area: Vineyards on the slopes of Mt.Etna, in Castiglione di Sicilia and Randazzo districts; cordon grapevine training system on volcanic-sandy soils, with wide thermicdifferences between day and night during the ripening phase.
Production technique: Hand-picked grapes in the first decade of October; maceration and fermentation at low temperature.
Ageing: Stainless steel vat for at least 4 months.
Colour: Medium ruby with purple nuances.
Perfume: Intense red fruit hints, typical of the grape variety.
Taste: Elegant, fresh, persistent with soft tannins and pleasant hints of red fruit.
Food pairing: Very versatile for food pairing. Best served chilled at 10°C and it's a perfect match with pasta with pulp of sea urchin, pasta with squid ink, beccafico sardines and with all red tuna dishes. It's a fresh summer red wine with meat dishes.
