Grape varieties: Nerello Mascalese vinified in white with a small percentages of local white grapes
Production area: Vineyards on the eastern slopes of Volcano Etna, cordon grapevine training system on volcanic-sandy soils, with strong thermic differences between day and night
Production technique: Hand-picked grapes, soft pressing of whole bunches; controlled-temperature fermentation. Second fermentation in autoclave (Charmat method), yeast contact for over 6 months.
Colour: Pale lemon-green, creamy foam with persistent bubbles and fine perlage
Perfume: High intensity of white flowers and bread crust
Taste: Off dry, medium acidity, full-bodied, creamy foam, high intensity of bread crust, good persistence
Food pairing: Like aperitif and with all fish and shellfish dishes
Alcohol: 12.0% vol*
