GRAPE TYPE: Nebbiolo
HARVEST: Manual, last fortnight of august/early september
WINE-MAKING PROCESS: Soft pressing of whole grapes and fermentation at a controlled temperature of around 15/16 degrees. Bottled in Spring and subjected to second fermentation directly in the bottle.
AGEING: In the bottle, on the fermentation lees for at least twenty-four months.
PAIRINGS: Recommended as aperitif with fresh fruit as accompaniment, and particularly for fish dishes, delicate risottos and first courses with seafood and greens. Very much worth trying with grilled and barbecued food.
SERVING TEMPERATURE: 4°-6°C
FEATURES: Brilliant rose colour, with persistent, fine bubbles. Fruity nose with notes of yeast and crusty bread, dry, lightly sweet flavour, sapid with persistent flowery notes.ALCOHOL: 12.5% vol*
