It is a pale yellow with greenish tinges and persistent perlage wine due to the fermentation in bottle according to the Classic Method

Output of grapes/wine: nearly 90 q/ha - nearly 60 hl/ha.
Grape harvest period: 50% on the second week of August and 50% on the first or the second week of September
Harvest and vinification: the grapes are harvested and, once in the winery, they are de-stemmed and pressed gently. The must is fermented with autochthon yeasts at 17/18°C and it ripens in steel tanks for six months. After that, the wine is fermented again in bottle for 18 months.
Organoleptical characteristics: the color is pale yellow with a delicate and persistent perlage.
It has aromas of white and yellow flowers with intense notes of fruit. Its taste is fresh, savory and quite soft
with a slightly bitter aftertaste typical of Vermentino grapes
Combining and service: excellent as aperitif, it combines well with fish dishes. It is recommended to serve at 8/9°C and to uncork the bottle just before serving
