Vinification: Immediately after harvest, the grapes are destemmed and racked to stainless steel vats. Manual pumping over is performed three times a day with a complete mixing of the pomace. Fermentation temperature was not subject to control, but it was nevertheless maintained approximately at 28°C. This is the best temperature for the extraction of colouring substances and tannins. After 10 days, racking and pressing are performed, to be followed by refinement in stainless steel vats.
