An icon of Orvieto, this wine is made by soft pressing and meticulous off- the-skins fermentation of grapes from vineyard selections on the Orvieto Classico hills. The wine has a pronounced fragrance of flowers and honey, with a well-balanced, sweetish flavour.
VARIETIES: Trebbiano Toscano (Procanico), Grechetto, Verdello, Malvasia Toscana, and Drupeggio.
PRODUCTION DISTRICT: Vineyard selections from the Orvieto Classico DOC hills, the oldest zone, in the province of Terni.
ALTITUDE AND ASPECT: Average altitude of 300 metres above sea level.
TYPE OF SOIL: Thin clay soils with good aspecting.
TRAINING SYSTEM: Guyot and spurred cordon.
HARVEST: Early October.
WINEMAKING METHOD: The harvested grapes are taken straight to the cellar. After soft crushing, the juices are cold settled and the clear must ferments at controlled temperatures (15–17 °C) with cultured yeasts. Ageing is in steel tanks until bottling.
SENSORY PROFILE: Pale straw yellow colour that heralds a subtle nose and fresh fragrance of hawthorn blossom, hinting at musk and citrus; the dry, full, soft but lively palate has a distinct, pleasing white peach backdrop.
RECOMMENDED CELLARING: 2 years in bottle, laid down in a dark cellar.
