Sicilian Caponata. Mixed vegetables in olive oil. Rich flavour of vegetables with sweet-sour perceptions. The first olfactory sensation comes from the peppers then softened by the other vegetables, all together exalted by extra virgin olive oil that harmonizes the product.

Preparation and usage. Very versatile, from aperitifs with toasted bread to appetizers or as side dish with meat or fish. It can be garnished with basil leaves or mint. Interesting pairing with finely cut cucunci (caper berries) or slightly toasted almonds.

Ingredients: Eggplants, peppers, tomatoes, onions, celery, extra virgin olive oil (4%), red vinegar, capers, sugar, salt.
