The power of Nerello Mascalese and the elegance of Carricante melt into an eruption of taste.
Appellation: IGT Terre Siciliane
Grape varieties: 70% Nerello Mascalese - 30% Carricante
Production area: Vineyards on the slopes of Mt. Etna in Castiglione di Sicilia and Randazzo districts; cordon grapevine training system on volcanic-sandy soils, with wide thermic differences between day and night during the ripening phase.
Production technique: Hand-picked grapes in the first decade of October; vinification in white of Nerello Mascalese and short maceration at low temperature of Carricante in order to enhance the most of its aromatic potential. Long fermentation at low temperature.
Aging: After the first racking, the blend of Carricante and Nerello Mascalese ages in stainless steel vats with the lees for 4 months. A small percentage of Carricante ages in big barrels of acacia.
Colour: Pale lemon with elegant green hues.
Perfume: Persistent aroma of vanilla, sage and nutmeg. Delicate aroma of white flowers.
Taste: Good freshness, minerality and sapidity, typical characteristics of these two varieties cultivated on the slopes of the Vulcano. Full-bodied wine, well balanced by a refreshing acidity.
Food pairing: It is perfect match with bluefish recipes, with the typical pasta ca'muddica from Palermo, and with all the most tasty crudité of the Mediterranean Sea.
