PRODUCTION AREA: Production area of Langhe DOC, Bricco di Vergne and Zonchetta in Barolo, Morino in La Morra and Bofani in Monforte d'Alba.
HARVEST: Manual, mid-September.
VINIFICATION: De-stemming, soft pressing and temperature controlled fermentation in stainless steel tanks. After a first decanting the wine is aged on its lees for fermentation and periodically agitated.
AGING: In stainless steel tanks.
PAIRINGS: Great served as an aperitif, with appetizers, pasta dishes, vegetable soups, white meats, fish and shellfish in general.
Fresh cheeses enhance its peculiarities.
