HARVEST: Manual, second half of the month of September.
VINIFICATION: Removal from stalks, gentle pressing and fermentation in stainless steel at a controlled temperature.
AGING: In stainless steel tanks, resting on yeast.
PAIRINGS: Appetizer, pasta and delicate risotto, seafood and white meat main dishes. Very pleasant with recipes based on greens. An optimum aperitif.
