GRAPES: Moscato bianco

PRODUCTION AREA: Production area of the Piemonte D.O.C., Boscareto in Serralunga d'Alba.

HARVEST: Manual, middle of October.

VINIFICATION: Withering of the grapes on mats for around 40-60 days in a well-ventilated room. Under these special conditions, there develops on the grapes a fine mold know as Botrytis cinerea
(Botrytis bunch rot). When this transformation is complete, the grapes are pressed.

AGING: Fermentation of the must is started in French oak barrels where its refinement will continue for around eight weeks. After that the wine is bottled.

PAIRINGS: A great dessert wine, accompanying rich creamy sweets, zabaglione, jams and marmalades.
Combined with foie-gras and herbal cheeses, it is a true discovery and a delicious transgression.

SERVING TEMPERATURE: 6°-8°C
