Vineyard: The vineyard is on a hillside in the Gavi district. This product is commonly called the winery's "base wine." The vineyards occupy different plots within the Gavi district and come from soils of different compositions.
A special mention of the meaning of the name of this wine: 'Salluvii' is the name of the people who occupied the Gavi area in ancient times.
Vinification: The grapes are immediately transferred to the winery, where they undergo a soft pressing to extract only their best part. Fermentation, at a controlled temperature of 18-20° C. to maintain the typical richness of the aromas of Cortese di Gavi, goes on very slowly, even for 20 days. Bottling is done in February and March to allow the wine a minimum of bottle aging before release.
The tasting: It is delightful from the spring following the harvest but reaches its greatest enjoyment after a few months of bottle aging. It does not fear a few years in the bottle.
