Selection of the best grapes and yields in the vineyard that are deliberately kept low give this wine big structure. It is matured for one to two years in small French oak barrels and spends nearly two years in the bottle before it is released for consumption. The most impressive characteristic of the wine is its aroma of cherries, which is typical of Rosso Cònero. It blends harmoniously with scents of wood. The wine is suitable for prolonged aging.

and Paterno.

Processing
- destalking and pressing of the grapes
- fermentation with skin contact of about 10 to 15 days
- racking and malolactic fermentation.
Maturation
- for about 18 months in barriques and bottle refinement
- for 12 months or more.
Color: intense, deep tonality of dark ruby red tending to garnet.
Bouquet: intense with a complex flavor of ripe red fruit, with a prevalence
of cherry scents fused with a delicate spiciness and vanilla tones
from the wood.
Flavor: sapid, soft, warm and velvety. It features appealing sensations
of jam and licorice root. Pronounced persistence.
Consumption: if it is well preserved, the wine can age for up to 10 years
and even more in exceptional vintages.
Food matches: it goes perfectly with grilled meats, game and extensively aged cheeses.
