Tasting notes: A large mousse with a fine and persistent peach-pink perlage. An elegant bouquet with hints of rose and small red fruit. Pleasant flavour, full and persistent with a fresh aftertaste and a long finish of fruit.
Vinification: Grapes destemmed at arrival in the winery are crushed and pressed. Fermentation of the product lasts 14 days at a temperature of 16°C. Following a fining filtration, the product is used for sparkling winemaking. The basic wine, to which sugar and selected yeast are added, is placed in an autoclave, and
a slow natural fermentation at controlled temperature (16-18°C) is performed for a period of about 90 days. When the desired pressure (5 bar) is reached, the sparkling wine is cooled, and polishing filtration and bottling can be performed. 

Food pairing suggestions: Excellent as an aperitif, it goes well with salmon or sushi, white meats with non spicy sauces, and it is perfect with shellfish.
