Types of grapes: Chardonnay 100%
Vinification: Soft pressing of must, fermentation in stainless steel vats at controlled temperature. Successively transferred to bottles in contact with the yeasts for a second fermentation. Manual turning on racks for 30 days, and after removal of residue, 2-3 months refining in the bottle before being sold.
Permanence in bottles in contact with yeasts: at least 24 months.
Sugar: 8 gr./lt.
Colour: pale, golden.
Aroma: peach blossom, honey and hazel-nuts.
Flavour: delicate, inviting.
Gastronomy: splendid as aperitif, excellent with meat or fish carpaccio, smoked salmon, seafood and vegetable salads, pleasing with sweet pastries.
