Single variety red vinification: with indigenous yeast and small addition of selected yeast during difficult vintage, 6 days maceration at 22°C controlled temperature. Spontaneous malolactic fermentation. After that the wine is built up in steel tanks and kept at least 6 months inside tonneau and french durmast barrique, to complete the ageing.
Before the bottling, the wine is passed again into steel tanks.
Bottle maturation duration: 4/6 months before commercialization.
Average wine life: suitable for long ageing.
