Fòla represents the essence of Cannonau. The vineyards are strictly controlled, following with great care and attention the maturation process and the increase of sugars level. This vine has found its ideal habitat in Sardinia and only on this island gets that aromatic and polyphenols richness, that make it “unique”. A complex wine, moderately alcoholic, rich in extract, balanced and intense.

Vinification Technique: The grapes are picked by hand in boxes. The thermo controlled fermentation takes a few days to extract all the polyphenolic potential of the grapes. The malolactic fermentation and the subsequent maturation are made in stainless steel tanks and big barrels.

Temperature of fermentation: 24-26°C

Fermentation time: 10-15 days

Maturation: Lees in stainless steel tanks for 70 % of the mass Lees in oak barrels for 30 % of the mass

Time of bottling: In June of the year following the harvest

Ageing potential: 8-10 years

Color: Ruby red with violet intense reflections

Aroma: Rich bouquet, Amarena cherry, in the end fine notes of mint

Taste: Smooth, long finish

Serving: With any kind of wild, spicy Sardinian pecorino
