Techincal Data
Harvest: Hand selection of grapes.
Vinification: Selection of the grapes and careful control during the pressing of skin. Fermentation is carried on in stainless steel tanks, with pumping over wine operation and delestage at 28°C for about 15 days.
Ageing: 100% in barriques with capacity 225L (50% New 50% 2nd hand) per 1 year.
Bottling: End of May 2018.

Alcohol: 15% vol

 

Tasting Notes
Colour: Intense ruby red with garnet reflexes.
Flavours: Intense and complex, with jam notes of plume, black currant, raspberry and tertiary notes of vanilla, cinnamon and tobacco.
Taste: Powerful and pleasant, with soft tannicity and balsamic aftertaste.
Pairing: Ideal with roasted meat as “Boar Cacciatora style”, “Hare on Salmì sauce” and long seasoned hard cheeses as “Parmigiano Reggiano”.
Temperature of Service: 18-20°C

 

Vintage Characteristics
The spring of 2016 was a particularly rainy one. This was very important for the water reserve during blossom. Defence against disease was not so easy to carry on; manual pruning and selection of the sprouts was essential to preserve the vineyard’s health. The dry and sunny summer was only briefly interrupted by rain. At harvest period the grapes were perfectly ripened and in the best conditions in years.
